For the Fritters:
  • 2 large tart-sweet apples, peeled, cored, and finely chopped about 1 pound / 450g
  • 3/4 cup whole milk, at room temperature
  • 1/4 teaspoon freshly grated nutmeg
  • 2 teaspoons pure vanilla extract
  • 2 large eggs, lightly beaten
  • 2 1/2 teaspoons baking powder
  • 1 1/2 cups plain flour
  • 1 tablespoon unsalted butter, melted
  • 3 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • Neutral frying oil such as canola or vegetable
For the Glaze:
  • 3 to 4 tablespoons whole milk adjusted for desired consistency
  • 1/2 teaspoon vanilla bean paste or extract
  • 2 cups sifted confectioners’ sugar
  • Pinch of cinnamon or nutmeg optional

Method
 

Step 1: Prepare the Apples
  1. Start by peeling and coring your apples. I recommend using tart-sweet varieties like Granny Smith or Honeycrisp. These apples add depth and balance to the fritters.
    • Once peeled, chop them into small, bite-sized pieces.

Step 2: Make the Batter
  1. In a large mixing bowl, combine the milk, vanilla extract, and beaten eggs. Whisk these ingredients together until they are well blended.
    • Next, in a separate bowl, mix together the flour, baking powder, cinnamon, nutmeg, and sugar.

    • Slowly add your dry mixture to the wet ingredients, stirring until just combined. Be cautious not to overmix; a few lumps are okay.

Step 3: Fold in the Apples
  1. Gently fold your chopped apples into the batter. This step is crucial because you want to ensure that the apples are evenly distributed throughout.
