Step 1: Gather Your Ingredients
- Before we start cooking, make sure all your ingredients are handy. This includes your cheeses, bread, bacon, mayonnaise, mustard, and smoked paprika. Having everything set will ensure a smooth and quick process.
Step 2: Cook the Bacon
- In a skillet, cook the bacon over medium heat until it’s crispy. This will usually take around 8 to 10 minutes. Keep an eye on it to prevent burning. Once it's done, transfer the slices to a paper towel to drain excess fat.
Step 3: Assemble the Sandwich
- On a clean surface, take two slices of sourdough bread. Spread one side of each slice with mayonnaise and a hint of mustard. You want a generous layer, but not too thick. Next, layer the sharp cheddar and spicy pepper jack on the uncoated side of one slice. Place the crispy bacon on top of the cheese.
Step 4: Top and Prepare for Grilling
- Place the second slice of bread on top (mayonnaise side facing in). Repeat the assembly for the second sandwich. The key is to create a delightful balance of cheese and bacon in the middle.
Step 5: Grill to Perfection
- Heat a skillet over medium heat. Place the sandwich in the skillet and cook for about 3 to 4 minutes, pressing down gently with a spatula to ensure even grilling. Keep an eye on it to avoid burning. Flip the sandwich carefully and grill the other side until golden brown, usually another 3 to 4 minutes.
Step 6: Serve and Enjoy
- Once both sides are crispy and golden, remove them from the skillet. Allow the sandwiches to cool for a couple of minutes before cutting them in half. This helps reduce the risk of cheese lava spilling everywhere. Serve with your favorite side!
