Method
 

Step 1: Gather Your Ingredients
  1. Before we start cooking, make sure all your ingredients are handy. This includes your cheeses, bread, bacon, mayonnaise, mustard, and smoked paprika. Having everything set will ensure a smooth and quick process.
Step 2: Cook the Bacon
  1. In a skillet, cook the bacon over medium heat until it’s crispy. This will usually take around 8 to 10 minutes. Keep an eye on it to prevent burning. Once it's done, transfer the slices to a paper towel to drain excess fat.
Step 3: Assemble the Sandwich
  1. On a clean surface, take two slices of sourdough bread. Spread one side of each slice with mayonnaise and a hint of mustard. You want a generous layer, but not too thick. Next, layer the sharp cheddar and spicy pepper jack on the uncoated side of one slice. Place the crispy bacon on top of the cheese.
