This dessert offers a burst of flavor with every bite. The sweetness of fresh blackberries mixed with a buttery, crumbly topping creates a comforting experience that feels like a warm hug. Growing up, my summer afternoons were often anchored by the sweetness of blackberries. We’d go to local farms to pick them ourselves. 
Those juicy, plump berries would find their way into my mom’s famous cobbler. Years later, I still crave that nostalgic flavor. This dessert has a special place in my heart, and I’m excited to share my take on it with you today.

Ingredients
  

  • 2 cups blackberries
  • 1 teaspoon pure vanilla extract
  • 1 cup self-raising flour
  • 1 tablespoon freshly squeezed lemon juice
  • 1 1/4 1/4 1 cups plus 2 tablespoons granulated sugar
  • 1 cup milk of choice
  • Vanilla ice cream

Method
 

Step 1: Prepare Your Oven
  1. First, let’s get that oven warmed up. Preheat it to 350°F (175°C). A cozy 350°F is what you want for that perfect bake.
Step 2: Mix the Blackberries
  1. In a medium bowl, combine 2 cups of blackberries with 1/4 cup of sugar and 1 tablespoon of lemon juice. Toss these ingredients gently to coat the blackberries evenly. This is where the magic begins as the sugar seeps in!
Step 3: Place in Baking Dish
  1. Transfer the mixed blackberries into a greased baking dish, preferably one that's about 8 x 8 inches. Spread them evenly across the bottom.
Step 4: Whisk the Dry Ingredients
  1. In a separate bowl, whisk together 1 cup of self-raising flour and 1 cup of sugar. Make sure there are no lumps; a good whisk goes a long way!
Step 5: Add Wet Ingredients
  1. To the dry mixture, add 1 cup of milk and 1 teaspoon of vanilla extract. Stir until everything is mixed well. You want a smooth batter that will form the topping.
Step 6: Combine with Melted Butter
  1. Once everything is combined, pour 4 tablespoons of melted butter into your batter. This step adds richness. Stir until just blended. You don't want to over-mix.
Step 7: Pour Over Blackberries
  1. Pour this mixture over the blackberries evenly. Do not stir. Let the blackberries peek through as the batter will rise while baking.
Step 8: Bake
  1. Place the baking dish in the preheated oven and bake for about 40-45 minutes or until the topping is lightly golden brown. You’d also want to check that a toothpick comes out clean from the top.
Step 9: Cool and Serve
  1. Once baked, allow the cobbler to cool for at least 10 minutes before serving. That warm and gooey texture is best enjoyed fresh!

Notes

  • Fresh vs. Frozen: Both types work well, but frozen blackberries may be a bit juicier. You might need to adjust sugar based on your sweetness preference.
  • Self-Raising Flour: If you don’t have self-raising flour, you can create your own. Mix 1 cup of all-purpose flour with 1.5 teaspoons of baking powder and a pinch of salt.
  • Butter: Make sure your butter is unsalted to control sweetness.
  • Sweetness Levels: Adjust the sugar according to the tartness of your blackberries. If they are ripe, you might reduce sugar.
