  • 2 slices of hearty sourdough bread, cut to about ¾" thick
  • 1-2 fresh basil leaves, finely chopped
  • 3 oz. of smooth Brie cheese, sliced thin
  • 2-3 tablespoons of mild red pepper jelly not spicy
  • 1/4 cup of sharp white cheddar, grated
  • 1 teaspoon of honey

Step 1: Prepare Your Ingredients
  1. Start by gathering your ingredients. Lay them out on your countertop. Having everything ready to go makes the cooking process smoother.
    I suggest slicing the brie thinly while spreading the red pepper jelly on one side of each slice of sourdough. This way, everything is prepped and ready for the next steps.
Step 2: Heat the Pan
  1. Grab a non-stick skillet. Place it over medium heat and add a chunk of butter. Allow it to melt and coat the pan evenly. The smell of butter sizzling is like music to my ears.
Step 3: Assemble the Sandwich
  1. Now it’s the fun part. Take one slice of bread and spread the jelly side up. Layer the sliced brie generously on top.
    Follow this with the grated cheddar. Sprinkle those finely chopped basil leaves and drizzle honey on top. Finally, place the second slice of sourdough, jelly side down, atop your masterpiece.
Step 4: Grill to Perfection
  1. Carefully place the assembled sandwich in the pan. Let it sit for a couple of minutes until golden brown. You may also want to lower the heat to ensure the cheese melts gloriously without burning the bread.
