To my surprise, I found that not only did they polish their plates, but they were also asking for seconds. That was the moment I decided that this dish deserves a spotlight. Fast forward a few years, and now, I can confidently say this recipe is a staple in my household.

Ingredients
  

For the Sauce:
  • 1/4 cup all-purpose flour for thickening the sauce
  • 2 cups whole milk the creaminess you can’t skip
  • 1/4 cup unsalted butter to enrich the flavor
  • 2 teaspoons kosher salt to bring everything together
  • 1 teaspoon freshly ground black pepper for a little heat
  • 1 tablespoon fresh thyme leaves adds an earthy herbaceous note
  • 2 cups sharp cheddar, shredded the star of the show
  • 1/3 cup freshly grated Parmesan cheese for extra depth
  • 1/2 teaspoon smoked paprika a little twist to surprise the taste buds
For the Vegetables & Base:
  • 4 cups broccoli florets washed and chopped into 1-inch pieces
  • 3 cups cauliflower florets washed and chopped into 1-inch pieces
  • 4 garlic cloves finely minced
  • 1 cup diced yellow onion provides that sweet aroma
For the Crumb Topping:
  • 2 tablespoons finely chopped fresh parsley for a pop of color
  • 2 tablespoons melted butter brings the topping together
  • 1 1/2 cups plain breadcrumbs the crunch factor
  • 2 teaspoons garlic powder to continue that garlicky goodness

Method
 

Step 1: Preheat the Oven
  1. Start by preheating your oven to 350°F (175°C). This allows the casserole to bake evenly.
Step 2: Prepare the Vegetables
  1. While the oven warms up, rinse your broccoli and cauliflower thoroughly. Chop them into bite-sized pieces. A good rule of thumb is to keep them roughly the same size so they cook evenly. Set them aside.
Step 3: Make the Sauce
  1. In a medium saucepan over medium heat, melt the butter. Once it's melted, whisk in the flour until it forms a paste. Gradually add the milk, whisking constantly to avoid lumps. Continue stirring until the mixture thickens – you want a nice creamy texture. This should take about 5 minutes.
    Once thickened, add the salt, pepper, thyme, sharp cheddar, and Parmesan. Stir until the cheese melts into a smooth sauce. Lastly, mix in the smoked paprika. Your sauce is ready!
  2. Step 4: Combine the Ingredients
  3. In a large mixing bowl, combine your chopped broccoli and cauliflower with the minced garlic and diced onions. Pour the cheesy sauce over the vegetables, stirring gently until everything is well-coated.
Step 5: Prepare the Crumb Topping
  1. In a smaller bowl, mix the breadcrumbs, chopped parsley, melted butter, and garlic powder. This combination will create a golden crust on top of your casserole.
Step 6: Assemble the Casserole
  1. Transfer the vegetable-sauce mixture into a greased casserole dish. Evenly sprinkle the breadcrumb mixture over the top.
Step 7: Bake the Casserole
  1. Place the casserole in the preheated oven and bake for about 25 to 30 minutes. You're looking for a golden-brown topping and bubbling cheese.
Step 8: Let It Rest
  1. Once you take the casserole out, allow it to rest for about 5-10 minutes. This will help it set and make serving easier.

  • Choose Fresh Produce: Aim for fresh broccoli and cauliflower. Frozen can work in a pinch but fresh has a better texture.
