Step 1: Prepare the Chicken
- Start by shredding your cooked chicken into bite-sized pieces. Place it in a medium mixing bowl. Drizzle the buffalo wing sauce over it and mix well. You want every piece coated because that’s where the flavor lies.

- Take one slice of bread and spread half the butter on one side. Place this slice butter-side down on a plate. Add half of the pepper Jack cheese, followed by the buffalo chicken mixture, and then sprinkle in the crumbled blue cheese. - In a non-stick skillet over medium heat, place your sandwich. Spread the remaining butter on the top slice. Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwich over, and continue cooking for another 3-4 minutes.
