Ingredients
  

  • 1 pound ground beef or substitute with ground chicken for a lighter option
  • 1 medium yellow onion, finely diced
  • 1 poblano pepper, deseeded and chopped small
  • 2 teaspoons garlic powder or roasted garlic powder for deeper flavor
  • 1 tablespoon bold chili powder blend
  • 2 teaspoons smoked paprika sweet-smoky style
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper adjust for heat preference
  • 1 teaspoon dried oregano new addition — enhances savory flavor
  • 1/4 cup rich tomato paste
  • 2–3 cups chicken broth or beef stock, depending on protein choice
  • 1 tablespoon Worcestershire sauce new addition — adds umami depth
  • 1 teaspoon sea salt and freshly cracked black pepper, to taste
Pasta & Creamy Layer:
  • 1 pound short-cut pasta such as penne, rotini, or shells
  • 1/4 cup zesty hot sauce Frank’s RedHot or similar
  • 2 ounces cream cheese, softened at room temperature
  • 2 cups shredded melting cheese a mix of colby, cheddar, or pepper jack
Garnishes:
  • Fresh green onions, thinly sliced
  • Handful of chopped fresh cilantro leaves
  • Optional: squeeze of fresh lime juice for brightness instead of extra salt

Method
 

Step 1: Prepare Your Ingredients
  1. Start by gathering all your ingredients. Ensure everything is prepped and within reach: chop the onions and poblano pepper, measure your spices, and get the pasta ready.
Step 2: Cook the Meat and Vegetables
  1. In a large pot over medium heat, add a splash of oil. Throw in the diced onion and poblano pepper. Sauté them until they become softened and translucent, about 5 minutes.
Step 3: Add the Ground Beef
  1. Once the onions are ready, add your ground beef (or chicken). Cook until browned, approximately 6-8 minutes. Make sure to break it up into smaller pieces with a wooden spoon.
Step 4: Stir in the Spices and Flavorings
  1. Now, it’s time to amp up the flavor. Sprinkle in the garlic powder, chili powder, smoked paprika, ground cumin, oregano, and cayenne pepper. Mix everything well. Let it cook for another minute until the spices become fragrant.
