Ingredients
  

  • 3 cups frozen mixed veggies or freshly chopped seasonal vegetables
  • 1 teaspoon dried Italian herb blend
  • 2 teaspoons Worcestershire sauce
  • 2 medium-sized potatoes, peeled and cut into small cubes
  • 1 pound extra-lean ground beef
  • 1 medium onion, finely chopped
  • 1 tablespoon fresh chopped parsley
  • Salt and freshly ground black pepper, to taste
  • 10 ounces condensed tomato bisque, 1 can
  • 28 ounces canned diced tomatoes with their juices, 1 can
  • 1 teaspoon smoked paprika
  • 3 1/2 cups rich beef stock
  • 2 cloves garlic, minced finely

Method
 

Step 1: Brown the Ground Beef
  1. Begin by placing a large pot over medium heat. Add the extra-lean ground beef and cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks. This step builds an essential flavor foundation.
Step 2: Cook the Vegetables
  1. Once the beef is browned, add in the finely chopped onion and minced garlic. Stir often, cooking until the onion softens, around 3-4 minutes.
Step 3: Add the Potatoes
  1. Next, toss in the peeled and cubed potatoes. Mix them well with the beef and onion. Cook for another 4 minutes to let them mingle.
Step 4: Mix in the Tomatoes and Stock
  1. Pour in the tomato bisque and the canned diced tomatoes, including their juices. Then, add the beef stock. Stir everything together, bringing the mixture to a gentle boil.
Step 5: Add Seasonings
  1. In this step, toss in the dried Italian herbs, Worcestershire sauce, and smoked paprika. Stir well, then season with salt and pepper to taste.
Step 6: Simmer
  1. Once boiling, reduce the heat to low. Cover the pot and let your soup simmer for about 20-30 minutes. This allows flavors to deepen and the potatoes to tenderize.
Step 7: Add Frozen Vegetables
  1. If you’re using frozen mixed veggies, add them now. Make sure they’re well mixed in, and check for seasoning. Let everything simmer together for another 10 minutes.
Step 8: Final Touches
  1. Just before serving, stir in the fresh chopped parsley. This adds a splattering of color and a refreshing flavor.
