Step 1: Prepare the Ingredients
- Start by gathering all your ingredients. Drain the kimchi well and chop it roughly. You don’t want it dripping wet, or the sandwich will turn soggy. Once that's done, shred your cheese. I recommend using mozzarella because of its delightful stretch. However, feel free to mix and match with other cheeses if you prefer.
Step 2: Spread the Condiments
- On a slice of your chosen bread, spread the mayonnaise evenly. Then, layer the Dijon mustard on top. This will add a kick and enhance the overall flavor.
Step 3: Add the Cheese and Kimchi
- Sprinkle a generous amount of shredded cheese on top of the mayonnaise. Don’t skimp here! Follow that with the roughly chopped kimchi, ensuring it’s evenly spread out for balanced flavor. Finally, top with more shredded cheese. Yes, you can never have too much cheese!
Step 4: Cover the Sandwich
- Place the second slice of bread on top, pressing down lightly. This helps to meld the flavors together.
Step 5: Heat the Pan
- In a skillet or pan over medium heat, add a bit of butter or oil. Let it warm up. You want a hot pan to achieve that perfect golden crust.
Step 6: Cook the Sandwich
- Once the pan is heated, place your sandwich on it. Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwich, adding a bit more butter to the pan if needed.
Step 7: Melt the Cheese
- Cook the other side until it’s also golden brown, and the cheese has melted. If you find the outside is browning too quickly before the cheese melts, cover the pan with a lid for a minute. This allows the cheese to warm without burning the bread.
