  • 16 oz. bacon, cooked until crispy and chopped
  • 2 heads iceberg lettuce, roughly chopped
  • 8 oz. baby spinach, rinsed and dried
  • 4 ripe tomatoes, chopped
  • 8 hard-boiled eggs, chopped
  • 1 bunch scallions, thinly sliced
  • 8 oz. sharp cheddar cheese, shredded
  • 10 oz. frozen sweet peas, partially thawed
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup toasted sunflower seeds optional, for crunch
Dressing Ingredients:
  • 1/2 cup mayonnaise or mix with Greek yogurt for a tangy twist
  • 1/2 cup sour cream
  • 2 tsp Dijon mustard optional, really adds depth
  • 1 Tbsp. sugar, plus more if needed
  • Chopped fresh dill, for garnish

Step 1: Prepare the Ingredients
  1. Start by gathering all the ingredients. Chop your lettuce, spinach, tomatoes, and hard-boiled eggs. Cook bacon until crispy and chop it into bite-sized pieces. Wash and thinly slice your scallions. If you’re using sunflower seeds, toast them lightly in a small skillet to enhance their flavor.
Step 2: Make the Dressing
  1. In a medium bowl, combine the mayonnaise, sour cream, and Dijon mustard. Whisk until the mixture is smooth and creamy. If you prefer your dressing a bit sweeter, add sugar to taste. Set your dressing aside for a moment.
Step 3: Layer the Salad
  1. Grab a clear glass bowl for the best visual effect. Start by layering the iceberg lettuce on the bottom, about half of the total amount. The lettuce serves as a robust base.
