Ingredients

  • 3 pounds ground chuck preferably 80/20
  • 2 large eggs
  • 8 slices cheddar American cheese
  • 1/4 cup grated Parmesan cheese
  • 8 slices of soft white sandwich bread
  • 1/2 cup chopped green onions
  • 1 cup crispy bacon bits
  • 1/2 cup beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon coarse kosher salt
  • 2 teaspoons freshly ground black pepper

Method

Step 1: Prepare the Meat Mixture
  1. In a large mixing bowl, combine the ground chuck with eggs, Parmesan cheese, Worcestershire sauce, salt, and pepper.
Use your hands to mix everything gently. You want the ingredients to blend nicely but don't overwork the meat; we want it tender!
Step 2: Sizzle the Bacon
  1. In a skillet over medium heat, cook the bacon until crisp. Once ready, drain the bacon on paper towels to absorb the excess fat.
Reserve some of the drippings in the pan; this will add even more flavor to the cheesesteak.
Step 3: Brown the Meat
  1. Add the meat mixture to the skillet with the reserved bacon drippings. Cook it over medium heat, breaking it apart with a spatula.
You'll know it's ready when it’s brown and no longer pink. Stir in the crispy bacon bits toward the end.
Step 4: Add Beef Stock
  1. Pour in the beef stock. This will help keep everything moist and add that rich flavor! Let the mixture simmer for a few minutes, absorbing the stock nicely.
Step 5: Assemble the Sandwiches
  1. Take your slices of white sandwich bread and top each slice generously with the meat mixture. Add a slice of cheddar cheese on top. Finally, close the sandwich with another slice of bread.
Step 6: Grill the Sandwiches
  1. In a clean skillet over medium heat, grill each sandwich for about 2-3 minutes on each side until golden brown and the cheese has melted. You can press down lightly to make them crispy and golden.

Notes

  • Use Quality Meat: For the best flavor, opt for fresher meat with a good amount of fat.
  • Don’t Skip the Cheese: Cheddar American is classic, but feel free to mix in some provolone for an extra depth of flavor.
  • Add Spices: Experiment with other spices like garlic powder or paprika for a kick.
  • Trust Your Senses: Look for the golden-brown color on the bread for that perfect toasty crunch.
  • Serve Warm: This is best served hot. The flavors meld beautifully while it's still warm and inviting.
