  • 6 hoagie or sub rolls, split but not fully sliced
  • 1 tablespoon unsalted butter
  • 3 tablespoons extra virgin olive oil
  • 2 pounds rib-eye or New York strip steak
  • 2 teaspoons fajita seasoning blend
  • 12 slices of pepper Jack cheese or provolone cheese
  • 1 large yellow bell pepper, cut into 1/2-inch strips
  • 1 large red bell pepper, cut into 1/2-inch strips
  • 2 poblano peppers, deseeded and sliced into 1/2-inch strips
  • 1 medium yellow onion, sliced into thick rings
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon balsamic vinegar

Method
 

Step 1: Prepare Your Ingredients
  1. First things first, gather all your ingredients and clear your workspace. There’s nothing worse than looking for an ingredient halfway through cooking. Trust me; I’ve been there!
Step 2: Cook the Steak
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil shimmers, add the thinly sliced steak and sprinkle the fajita seasoning on top.
    Spread it out evenly. Allow it to cook for about 3-4 minutes until the meat is browned but still juicy. Flip it occasionally for even cooking. Remove the steak from the pan and set it aside on a plate.
Step 3: Sauté the Vegetables
  1. Next, in the same skillet, add the remaining tablespoon of olive oil. Toss in the onions and sauté them for 2-3 minutes.
    Then, add the bell peppers and poblano peppers. Sprinkle the salt and pepper over them. Sauté for another 5-7 minutes until the veggies are tender yet still crisp. The colors should be vibrant, making your kitchen feel like a market!
Step 4: Combine Steak and Vegetables
