  • 4 to 6 fresh hoagie rolls
  • 2 large sweet onions, thinly sliced

  • 1 1/2 pounds thinly sliced beef rib-eye or sirloin recommended
Homemade Cheese Sauce
  • 1 can whole evaporated milk
  • 1/4 tsp kosher salt
  • 1 tsp cornstarch
  • 16 oz shredded cheddar or provolone cheese
  • 1/4 tsp dry mustard powder
  • 2 ounces cream cheese, softened
  • 1/4 tsp sugar
  • Pinch of garlic powder
  • 1 tsp hot sauce optional, for a subtle zing

Method
 

Step 1: Prepare the Onions
  1. Start by heating a large skillet over medium heat. Add 2 tablespoons of the oil. Once it's hot, toss in the thinly sliced onions. Cook them down with a sprinkle of sugar. This will help caramelize them, resulting in sweet, golden goodness. Stir occasionally for about 10-15 minutes until they reach that tender, caramel brown state. Add the minced garlic during the last minute so that it doesn't burn.
Step 2: Cook the Beef
  1. Once the onions are done, push them to one side of the skillet. Add the remaining oil to the empty side. Increase the heat to medium-high. Toss in the seasoned, thinly sliced beef.
