Ingredients
  

  • 4 quarts filtered water
  • 250g kosher salt, plus more if necessary
  • 1 whole turkey avoid kosher, pre-brined, or saline-injected varieties
  • 3 ripe oranges
  • 3 fresh lemons
  • 1/2 cup fresh sage leaves, lightly crushed
  • 5 large garlic cloves, peeled and smashed
  • 2 dried bay leaves
  • 1 tablespoon whole black peppercorns
  • 1 teaspoon crushed red pepper flakes
  • 1 small cinnamon stick

Step 1: Prepare Your Ingredients
  1. Start by gathering all the necessary ingredients. This means measuring out your water, salt, and spices.

Step 2: Create the Brine Solution
  1. In a large pot, combine the water and kosher salt. Stir the mixture until the salt is fully dissolved. This is crucial; no one wants a grainy brine.
    Next, add in the smashed garlic, crushed sage, bay leaves, black peppercorns, red pepper flakes, cinnamon stick, and the juices from the zested lemons and oranges.
Step 3: Add Citrus Fruits
